Brownies- The Hard Way and the Easy Way

We have seen so many brownies on Instagram this season that we think that no one’s home quarantine is complete without baking it. For those of you who are super health conscious and up for a little challenge can follow our tried and tested recipe below. It is vegan and free of refined flour. But for those of you who are lazy like us we have got Plattered vegan cake mixes to the rescue. We followed the two step instructions on the back of their brownie variant. The result was delicious, fudgy, and satisfying so much so that it is going to become our go-to for birthdays and other celebrations. 

​Vegan and refined-flour free brownie recipe:


Ingredients

  1. 1 cup suji (semolina)
  2. ¼ cup powdered sugar
  3. 1 tbsp baking powder
  4. ½ tbsp baking soda
  5. 50 ml olive oil
  6. 1 cup almond milk
  7. 1 tbsp coffee powder
  8. 60gm chocolate compound
  9. 2 tbsp cocoa powder

Instructions

  1. Take a mixer jar and combine milk, baking powder, baking soda and oil in it. Blend it for 2 minutes.
  2. Then put the suji in the jar gradually and keep mixing it in with a spoon. 
  3. Melt chocolate on a double boiler. 
  4. Mix chocolate and coffee powder with the other ingredients in the jar. 
  5. Pour this batter in a greased cake tin. (Yes, you can grease the tin with olive oil. No need for butter!)
  6. Bake the cake for 25-30 minutes at 180 C in a preheated oven. 
  7. Poke the cake with a toothpick or knife to check if it is ready. If the toothpick/knife comes out clean then the cake is ready to eat.
  8. Demould the cake after letting it cool down for 15 minutes.
